Cauliflower mash

Mashed cauliflower is a quick and easy dish. It’s a popular substitute for mashed potatoes in low carb diets. But its so good it should be discovered by everyone. Make this ahead of time. It keeps well in the refrigerator for up to 3 days.

Ingredients

1 head cauliflower
5 cloves garlic
Salt
1 tablespoon butter
2 tablespoons sour cream

Instructions

Put freshly washed cauliflower florets with water still clinging to them in a large bowl and sprinkle with salt. Add the garlic cloves and a tablespoon of water. Cover the bowl with a microwave-safe lid or plate and cook on high power until tender, approximately 5 minutes, depending on the microwave.

Put the cooked cauliflower and garlic into a food processor. Add the butter and sour cream. Pulse until lumpy smooth, or the desired consistency.
