This can be made with green or yellow zucchini (summer squash).
Zucchini, 2 - about 1 lb. Coconut oil, 3 tablespoons Chives, oregano, rosemary, or other herb of your choice Butter, 1 tablespoon Salt and pepper
Cut the zucchini into sticks, about the length and thickness of your index finger. Heat the coconut oil in a skillet over high heat for a minute. Add the zucchini. Cook on high for 5 minutes. Add the herb, butter, salt and pepper and mix. Makes 2 to 4 servings.
Olive oil can be used in place of the coconut oil, if you prefer or don’t have the coconut oil.
