Whole-meal salad #2

For tips on preparing vegetables for the salad, see the section about salads. The following is a single serving.


Lettuce, 3 leaves
Asparagus, raw, 1 or 2
Green beans, 6
Carrot, 1 small
Avocado, half
Peach, half
Pistachios, 6 to 8, shelled


Place full lettuce leaves on the bottom. In a bowl, mix together asparagus, green beans and carrot. Add 2 tablespoons of mayonnaise. Mix and then put the mixture on top of the lettuce. Place alternating slices of avocado and peach around the outside edge of the dish. Top with pistachios. Serves 1.
