Coconut milk

Coconut oil is healthy and coconut milk is rich with coconut oil. Most of the canned varieties have emulsifiers or preservatives. Homemade coconut milk takes only about 10 minutes and tastes better than canned. Because it is fresh and without preservatives it is good for about two days in the refrigerator.

Ingredients

1/2 cup unsweetened shredded coconut or 1 cup unsweetened coconut flakes
1 1/2 cup water

Instructions

Boil the water and let it cool for 2 minutes. Put the water and the coconut into a blender and blend for two or three minutes. Strain through a cheesecloth or filter bag. Makes about 1 cup.

I’ve even put the blended mix into a French press coffee maker and used that to strain.
