Creamy vinaigrette

Vinaigrettes are traditional on salads. Also can be put onto any vegetables, fish or meat.


3 tablespoons vinegar (sherry vinegar is very good, or use another wine vinegar)
2 teaspoons Dijon mustard
1 egg yolk
1/2 teaspoon salt
a grind of pepper
1/2 cup extra virgin olive oil


Put everything into a bowl and mix with a fork or whisk, or put into a jar and vigorously shake.
