Basic rice

This is a basic every day rice recipe. The recipe calls for Arborio rice, but other varieties work as well, including Asian short-grain rice and California-grown medium-grain rice.

Ingredients

1 cup Arborio rice
3 tablespoons coconut oil (or butter)
1 1/2 cup broth or water

Instructions

Put the rice and coconut oil into a saucepan and heat for 3 minutes. Stir occasionally. While the rice and oil is heating, put the broth or water  into a measuring cup and microwave for a minute or two until hot. When the rice and oil has heated for 3 minutes, add the hot broth. Bring to a boil, cover and simmer for 15 minutes.

Microwave alternative

Microwave rice can be convenient. One less pan on the stove top. Use 1 cup of rice, 2 cups of broth or water and 3 tablespoons of coconut oil or butter. Put everything into a glass microwave-safe baking dish, place the dish covered into the microwave. Cook on high for 5 minutes, then cook at 50% power for 15 minutes and let it rest for 5 minutes after.
