Whole-meal salad #1

For tips on preparing vegetables for the salad, see the section about salads. The following is a single serving.


Lettuce, 3 leaves
Carrot, half
Celery, one stalk
Red cabbage, quarter cup
Radishes, 3 medium
Avocado, half
Blueberries, half cup
Banana, half small
egg, 1 to 3 hard boiled


Arrange in layers, starting with the lettuce. Garnish with watercress and top with a dressing like a creamy vinaigrette and the sliced hard-boiled eggs. Serves 1.
