Fish in butter sauce

This recipe is for catfish, one of the best farmed fish that’s regularly available, but it can be used for most other white fish.


Catfish fillets, about 1 lb.
Butter, 2 tablespoons
Lemon, 1/2 medium


Place catfish fillets in a glass microwave dish. Dot the fish fillets with butter and squeeze the lemon juice over them. Sprinkle with paprika. Cover the dish with a glass cover or plate. Cook in the microwave on high for 6 to 8 minutes. The time depends on the thickness of the fish and the power of your microwave. It’ll probably take 2 or 3 tries until you learn what works best for you. Serve the fillets with the butter-lemon sauce from the bottom of the cooking dish. Makes about 2 servings.
