Spinach frittata

A frittata is an Italian egg dish that’s similar to an omelet. The method here is to start on the stove top and then finish under the broiler.

Ingredients

6   large eggs
3   tablespoons cream or half-and-half
1/4 teaspoon salt
1/2 cup grated cheese (Parmesan or cheddar or any cheese you like)
1   bag baby spinach (6 ounce)
butter or ghee

Instructions

Turn on broiler and adjust rack to 5 inches away.

In a bowl, mix eggs, cream, salt. Microwave spinach in a covered bowl for 1 to 2 minutes (depending on the power level of the microwave). Heat an oven-proof skillet for 2 minutes, then add the butter. After a minute, add spinach to the skillet and stir for a minute. Then add egg mixture, spreading it out evenly over the pan. Sprinkle cheese over the top. Cook for 2 to 3 minutes on the stove top, then put the pan under the broiler for 2 minutes, being sure to watch and make sure it doesn’t over-cook. Remove from the over and let stand a few minutes before serving.
