Endive with lemon cream

The lemon cream on the slightly bitter endive makes this a perfect appetizer to start a meal.

Ingredients

1 head Belgian endive
1/2 cup Lemon cream dressing

Instructions

Trim the ends off the Belgian endive and separate into individual shoots.  Toss the shoots in the lemon cream and serve.

If you have time, a nice addition to the lemon cream is a tablespoon or two of finely diced shallot.
