Cheese sauce is just white sauce with cheese added. Put it on eggs. Make it in less than 5 minutes. This is another sauce that can be made ahead of time and kept in the refrigerator for a week.
2 tablespoons butter 2 tablespoons tapioca flour 1 cup cream or half-and-half 1/4 teaspoon salt Lemon juice or white wine vinegar 2 egg yolks 1/2 cup grated cheese (use a hard cheese like cheddar or jack)
Melt butter over low heat. Rapidly stir in tapioca flour until smooth. Add cream while stirring rapidly to remove lumps. When done add juice of half a lemon or a tablespoon of vinegar and the egg yolks, stir with a fork. Add cheese and continue stirring until smooth.
