White sauce

White sauce can be used on almost anything from meat and fish to vegetables. Put it on eggs. Add a half cup of grated cheese at the end and turn this into a cheese sauce. Chop an onion and saute it in butter for 10 to 15 minutes and add to the basic white sauce to make an onion sauce. The basic sauce can be made in less than 5 minutes. Make it ahead of time. It will keep in the refrigerator for about a week.

Ingredients

2 tablespoons butter
2 tablespoons tapioca flour
1 cup cream or half-and-half
1/4 teaspoon salt
Lemon juice or white wine vinegar
2 egg yolks

Instructions

Melt butter over low heat. Rapidly stir in tapioca flour until smooth. Add cream while stirring rapidly to remove lumps. When done add juice of half a lemon or a tablespoon of vinegar and the egg yolks, stir with a fork.

Add cheese to make it a cheese sauce, or add sauteed onions to make it an onion sauce.
