Mayonnaise

Mayonnaise tastes great, is healthy and can be made quickly. Watch this video to see how to do it in about a minute using a hand blender (but DO NOT use the ingredients shown in the video, canola oil is completely toxic stuff). If you don’t already have a hand blender, you might get one. There’s a lot that can be done with it; it’s cheaper and more flexible than a blender or food processor. There are many different brands and models. One that’s good and relatively low-priced is the Kalorik Sunny Morning Stick Mixer.

Make mayonnaise with coconut oil, for its health benefits. If you don’t like the taste of coconut oil, then you can use olive oil instead.

Put all of the ingredients into a tall mason jar or a beaker, eggs first. Insert the stick blender all the way to the bottom and at high speed pulse mix for 10 seconds. Then start moving the stick blender up and down the jar and continue to pulse mix until everything has reached the consistency of a smooth spread. Leave at room temperature for several hours before refrigerating. Can be kept refrigerated for about 5 days.

Ingredients

1 whole egg
2 egg yolks
1 tablespoon mustard
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup extra virgin coconut oil
1/2 cup extra virgin olive oil
juice of half a lemon or 1 tablespoon white wine vinegar (or both lemon and vinegar)
