Pickled beets

You can make pickled beets with the precooked beets sold in vacuum-packs in the produce section of the supermarket.

Ingredients

2 8oz. packages of cooked beets.
  Plain beets with no added flavorings or spices
1 red onion, cut into thin slices
1/4 cup pitted olives
1 teaspoon rosemary
1/4 cup wine vinegar
1/2 cup extra virgin olive oil

Instructions

Put beets, onions and olives into a bowl. Mix rosemary, vinegar and oil and then pour over the beets and onions in the bowl. Pack mixture into a glass jar and refrigerate.
