Buttered spinach

Quick spinach in the microwave.

Ingredients

Spinach, 1 6-ounce bag
Water
Butter, 1 tablespoon

Instructions

Put the spinach in a glass microwave dish.  Add 2 tablespoons of water and cover (use a plate if your dish doesn’t have a cover). Microwave on high for 2 to 3 minutes, until spinach is wilted. Remove from the microwave and put the spinach in a collander and rinse in cold water. Squeeze the spinach dry and then chop on a cutting board.

Melt the butter in a saute pan, add the spinach and stir. Cook for about a minute.  Makes one serving.

You can use coconut oil in place of the butter, if you prefer.
