Whole-meal salad #3

For tips on preparing vegetables for the salad, see the section about salads. The following is a single serving.


Lettuce, 4 leaves
Celery, 2 stalks
Cucumber, half cut into quarters
Cauliflower, 3 or 4 florets 
Summer squash, raw, half cut into quarters
Carrot, 1 cut into spears


Keep all the vegetables whole or cut as indicated. Arrange on a plate and serve with blue cheese sauce. Serves 1.
