Spring salad #3

Sugar snap peas   1 1/2 pounds, cut in half
Radishes          1 bunch, thinly sliced
Fresh mint        2 tablespoons, chopped
Feta cheese       4 ounces


Toss peas, radishes, mint and cheese in a bowl. Mix a dressing of 3 tablespoons olive oil and 2 tablespoons fresh lemon juice. Pour dressing over salad, and serve. Ricotta salata can be substituted for feta cheese.
