Spring salad #1

For tips on preparing vegetables for the salad, see the section about salads. The following is a single serving.

Ingredients

Arugula, 1 cup
Fennel, 1 small bulb sliced
Avocado, 1 whole sliced

Instructions

Put arugula and fennel in a bowl. Top with slices of avocado. Use a dressing like a creamy vinaigrette. Serves 1.
