Celery Root Remoulade

Celery root is sometimes called celeriac. It has a woodsy, celery-like flavor. This salad is like cole slaw and can be used as you would use slaw.

Ingredients

2 tablespoons lemon juice
1 medium-size celery root, peeled
1/3 cup mayonnaise or sour cream
1 tablespoon Dijon mustard
Salt and pepper

Instructions

Put the lemon juice in a bowl. Cut the top and bottom from the celery root, then use a paring knife to peel the outer layer. Shred the celery root using the large holes on a box grater, tossing it in the lemon juice. Mix the mayonnaise or sour cream with the mustard, salt and pepper. Add the dressing to the celery root and toss to coat.
