Carrot salad

A French classic.

Use a box grater or a food processor.

Ingredients

4 large carrots
1 lemon juiced
1/4 cup olive oil
salt and pepper (to taste)

Instructions

Finely grate the carrots. Mix the lemon juice and olive oil, adding salt and pepper. Mix all together. Serves 4.

This can be kept in the refrigerator for 2 or 3 days.

Two tablespoons of wine vinegar (white or red) can be used instead of the lemon juice. Or mix half vinegar, half lemon.

Also, a half and half mix of olive oil and coconut oil is a tasty variation that also gives a nutritional boost.
